Recipe | Frittata

Frittata's are fast becoming mine and Ollys absolute favourite quick and easy meal. The options are endless and it really is fast. 

I thought I would share the recipe for those of us who are always in a hurry and either feel like we don't have time to eat or simply snack unhealthily instead! 
I am going to share two lots of ingredients, just to show you how really flexible this meal is - and how easy it is to stay healthy even when in a rush.

The recipe is great for your body and is surprisingly filling - what more could you want! You can just use one pan to save on washing up, and can just use whatever you have lying in the fridge.


Also, this could totally be breakfast, lunch or dinner...

Serves: 1 or 2
Total time: 15 minutes


Ingredients


Coconut oil (or other oil if you don't have coconut but I recommend getting it to add to your healthy fats - remember we need to balance our macros!)

Now for 1 person...

2 eggs
1/4 pepper
2 mushrooms
Feta cheese

For 2 people...

4 eggs
2 chicken breasts
1/2 pepper
Small handful of broccoli

Method


Preheat the grill on a high setting.

Place the oil in a small frying pan on the hob and heat on a low/medium.

Literally shove all the 'extra' ingredients in, however you want them - I like the pieces to be really small in a frittata but it is up to you - For one, I put the mushroom and pepper in at this stage; for two, I put the chicken and pepper in.

After the ingredients are cooked, beat up the eggs and add in any spices or herbs you fancy - I usually do black pepper and cayenne pepper.

After about three minutes of frying, add the cheese or tiny broccoli florets on top.

After another three minutes of frying, finish under the grill until golden on top and serve.
