Recipe: Quinoa Parmesan Chicken

I absolutely love this dish. It's something a bit different to your every day dinner, looks fab, tastes even better AND is healthy.

Obviously you can have whatever you want with your chicken but (as seen below) I love butternut squash and sweet potato cubes with spinach and mixed vegetables. Oh, and I added extra parmesan cheese in this picture because I omitted the mozzarella from the recipe below.
Makes: 4 portions
Total time: approx. 1 hour

1/2 cup quinoa
2 chicken breasts, cut crosswise in half  (trust me on this one)
1/2 cup whole wheat flour
1 - 2 eggs (start with one and add another is necessary)
1/4 cup shredded mozzarella cheese (optional)
1/4 cup grated Parmesan cheese
1/2 cup marinara sauce
Mixed herbs, salt, pepper (any other seasoning you like) and a garnish, again optional.

Firstly, I cook the quinoa so it has time to cool before having to stick your hands in it! When cooking, add the mixed herbs or whatever seasoning you prefer.

Preheat oven to 200 degrees C.
Put greaseproof paper onto a baking tray (or two) ready.
Cut the chicken crossways in half (trust me on this one) and flatten* then season with salt and pepper, to your taste.

Get three bowls ready - one with the flour, one with a beaten egg and one with the quinoa mixture.
Working in batches, first put one piece of chicken in the flour then in the eggs then in the quinoa mixture.

When doing this, make sure you press down firmly - you want to make sure one side is completely coated (don't worry about the other side as it would just stick to the baking tray).

Repeat with all four pieces and place onto the baking tray.
Place into oven and bake for about 25 minutes, or until golden brown.

Take it out and top with cheeses and marinara and then place back into the oven and bake until cheeses have melted; about 5 more minutes.

*to flatten I put a piece of chicken in between greaseproof paper, on top of a cutting board and hit it with a rolling pin until even.
